Leading the charge was Wisconsin Master Cheesemaker Richard “Whitie” Wold, regarded within the cheese manufacturing industry as the “Father of Pepper Jack.” Wold led the development of the large-scale production processes that made pepper-infused Monterey Jack possible at volume, and his work transformed Pepper Jack from a specialty item into a fixture of the supermarket dairy case and the family dinner table.

The company behind that breakthrough, Associated Milk Producers Inc., known as AMPI, is one of the largest cheese cooperatives in the United States. Headquartered in New Ulm, Minnesota, it is owned by dairy farm families from Wisconsin, Minnesota, Iowa, Nebraska, South Dakota, and North Dakota. The co-op’s cheese and powdered dairy products serve foodservice, retail, and food ingredient customers, and in 2019 it launched its Dinner Bell Creamery brand, celebrating more than fifty years of dairy farm families partnering with skilled craftsmen. AMPI is a leading Pepper Jack manufacturer and was the first to perfect its commercial production.

The holiday itself is brand new. AMPI submitted National Pepper Jack Cheese Day to celebrate twenty-five years of large-scale Pepper Jack production, counting from those first Jim Falls blocks in September 2001. The Registrar at National Day Calendar officially approved the day to be celebrated annually on September 21, and the first National Pepper Jack Cheese Day was observed on September 21, 2026.
